LOW FODMAP RECIPES

Chicken Piccata

Ingredients
  • 2 large chicken breasts
  • 2T vegetable oil (You may use garlic-infused oil instead)
  • ¼ cup dry white wine
  • ½ cup low FODMAP chicken broth
  • 1 T capers, drained
  • 2 T butter
  • 1 lemon
  • Flour
  • Salt and pepper
Preparation
  • Cut chicken breasts in half, pound with mallet to consistent thickness
  • Season chicken with salt and pepper, dust with flour
  • Saute chicken in oil, 2-3 minutes on one side, 1-2 minutes on the other side
  • Set chicken aside
  • Deglaze pan with wine until slightly browned (2 minutes)
  • Add broth, lemon juice and capers
  • Return chicken to pan and cook one minute each side
  • Set chicken aside
  • Add butter and lemon slices to pan
  • Serve sauce over chicken
