Low FODMAP Chocolate Chip Cookies

These are so good, you won’t even be able to tell they are gluten-free!

Ingredients
  • Makes 20-24 cookies.
  • Serving size 1-2 cookies
  • 1 1/2 sticks (12 tablespoons) unsalted butter, room temperature
  • 3/4 cup packed brown sugar
  • 1/4 cup sugar
  • ½ teaspoon salt
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups gluten free flour blend (I use Pamela’s gluten-free flour)
  • 1 teaspoon baking soda
  • 3/4 cup semi-sweet or dark chocolate chips

Instructions
  1. Preheat oven to 350 degrees F.
  2. Line two baking sheets with parchment paper.
  3. In large bowl, cream butter, brown sugar and sugar, together.
  4. Blend in egg and vanilla extract.
  5. Slowly add in flour blend, salt and baking soda, until creamy.
  6. Fold in chocolate chips.
  7. Use about a heaping tablespoon of dough per cookie (I used a scoop for even cookies), placing about 2 inches apart.
  8. Bake for 8-12 minutes. Edges should be lightly brown.
