I was having various stomach symptoms associated with what I ate. I figured out that I had a fructose intolerance and needed guidance on how to figure out what I can and can’t eat in order to be symptom-free.
I was having a hard time figuring out what foods were triggering my symptoms. I had some ideas about triggers, but they were never consistent enough for me to narrow it down to a specific item. I also wasn’t aware of all the symptoms I was having because I got used to dealing with them. Erica walked me through each symptom and potential food triggers. She then introduced me to the low FODMAP diet and explained the process of the diet and why it is effective. She worked with me to determine what I can and can’t eat and gave me a multitude of resources to set me up for success. Due to Erica’s help, I now feel confident in my ability to identify my symptoms and associate them with certain foods. After the first week of my new diet, I realized that I was almost completely symptom-free and was still able to eat food that I liked. I hadn’t felt symptom-free in months and was thankful for the relief provided by her insight and a change in my diet. I can do more of what I want without having to worry about my stomach hurting or needing to urgently use the restroom. I have more energy and am more confident in my ability to control how I feel instead of waking up every day not knowing if I will be sick or not. I am fructose, lactose, gluten-free, and have IBS! Erica helped me in so many ways. She helped me follow the low Fodmap diet and introduced some new foods that I could have. She also got me moving. I go to the gym regularly and I have cut back on my intake of beer and both of those were HUGE for me.

Prior to meeting Erica, I experienced a wide range of stomach issues. I had dealt with these issues my entire life, so while they were uncomfortable, I had gotten used to constant stomach aches and bloating. Sometimes I'd try to google diets but nothing worked. There was just way too much information out there and none of it seemed to fit my issues. I was referred to Erica by my doctor. I wasn't sure what to expect but I was willing to give it a try. I was blown away! She was knowledgeable and provided me with step by step diet instructions. Her compassion towards my situation is what impressed me the most. I was embarrassed by my terrible eating habits, but she was kind and patient. Within a week I experienced relief from a lifetime of symptoms. I could not believe it! Erica has been more than helpful to our family. Chuck needed help quickly when he found out he had stage 4 kidney cancer. Erica was there to direct us how to change Chuck's diet so he could avoid kidney dialysis. I prepare the foods at home & needed to learn what foods to buy & how to cook them. 2020 I was told you have fatty liver disease. Scared me because I lost my mom to a liver disease 10 years ago. I was told lose weight and exercise that will help keep your liver from getting worse. I decided I needed help with this. So I got in touch with Erica. Best thing I ever did! She helped me make better choices with food and keep tack of what I ate. And I got out there and walked. Started in May walking and watching and keeping track of my food I ate. Im proud to say as of today I'm down about 20 pounds. Many inches. Went from size 12 jean to a 8. Just had a physical and my blood work was the best it has been in years. A year ago at my physical I was 187 pounds a couple weeks ago I weighed in on there scale at 170. After struggling with stomach issues and "icky" bowel movements for over a year, enough was enough! The thought of changing my diet and cutting foods out was very scary, but I knew I had to try something. Erica, made the process easy and simple. Within just a few days I was already feeling better, after four weeks, I was feeling great. Having normal bowel movements after a year of struggling, honestly made me do a "happy dance"! I met Erica at Hy-Vee to see items that are lactose free. First, we met in the cafe so she could look over my 5-day food log/symptoms and ask me questions about my situation. Just keeping track of the food and symptoms was helpful to me. I was able to keep in contact with her through email before we actually met. Erica was easy to talk with. She genuinely wanted to help me through this rough patch. She gave me an information sheet with the Lactose Content of Common Food and Drinks. This information was also very helpful. The good news for me is that cheese has just .1 gram of lactose! Later that same day she emailed me with a list of other things that can cause GI distress. I won’t hesitate to meet with her again if I continue to have problems.
